Cold Shrimp Ramen Salad with Sesame Dressing

Yield: 6 servings | Prep Time: 10 minutes | Cook Time: 5 minutes

Ingredients

  • 1 egg, beaten
  • 1 Tbsp. oil
  • 4 cups ramen noodles, cooked
  • ½ lb. shrimp, tail-on, cooked, peeled and deveined
  • ½ cup red peppers, julienned
  • ½ cup carrots, julienned
  • ½ cup cucumbers, julienned
  • 2 scallions, julienned
  • ½ cup corn, cooked
  • ¼ cup toasted sesame seeds

Sesame Dressing:

Directions

  1. In a small 8-inch nonstick sauté pan, heat oil and pour egg, and allow to cook through, like a thin pancake. Remove and let cool and cut into thin strips.
  2. Combine all sesame dressing ingredients.
  3. Divide noodles, shrimp, red peppers, carrots, cucumbers, scallions and corn between 2 bowls.
  4. Pour dressing over and garnish with sesame seeds.
