Continue cooking for 3-5 minutes until chicken is cooked through. Stir in green onion, peanuts, and water chestnuts. Divide mixture among lettuce cups and top each with sesame seeds and fresh cilantro.
Spicy peanut sauce: In a medium bowl, whisk together all peanut dipping sauce ingredients. Serve alongside lettuce cups and top lettuce cups with desired amount.
