Vietnamese Pork Loin Sandwiches

Ingredients

Pickled Vegetables:

Asian Mayonnaise:

Pork:

Sandwich:

  • 4 - 6 in. baguettes, cut in half

Directions

  1. Combine all pickled vegetable ingredients and set aside.
  2. Combine all Asian mayonnaise ingredients and set aside.
  3. Combine pork ingredients and marinate for 20 minutes.
  4. Heat grill and grill pork and baguettes. Slice pork ¼-inch thick on bias.
  5. To assemble spread mayonnaise on both sides, generously. Divide pork, cucumbers, and carrots between sandwiches. Garnish with mint and cilantro.
