1/2 cup lowfat cottage cheese
1 cup tightly packed mixed fresh herbs (such as parsley, basil, dill and mint)
2 cloves garlic
1/4 cup Nakano®️ Natural Rice Vinegar
1/4 cup olive oil
1/2 tsp ground black pepper
Step 1: Puree cottage cheese in food processor about 1 min. or until smooth. Add herbs and garlic; pulse until roughly chopped. Add remaining ingredients; process until smooth. Season to taste with salt.
Step 2: Serving ideas: drizzle over rice or cooked proteins; serve with veggie dippers or chips; use as a salad dressing or sandwich topper; marinate meats, seafood or vegetables; toss with cooked chilled pasta or grains.
Although the amount of each herb is not crucial, for best flavor use a combination of at least two different herbs to equal 1 cup. This is a perfect recipe to use up remnants of fresh herbs and could also include tarragon, chives, sage or cilantro.
Substitute low-fat ricotta cheese for the cottage cheese.
For a thicker consistency, use 1 cup cottage cheese.
